These cinnamon rolls are delicious!  Growing up cinnamon rolls were one of my favorite things to make.  When venturing into the raw lifestyle, it seemed unfair to have to give up making and enjoying cinnamon rolls.  These rolls take approximately the same amount of time to prepare as any other cinnamon roll recipe but are packed with nutrition and are a great way to start the day.  Enjoy the raw form of this favorite breakfast dish.

Date Paste Ingredients:

6 Chinese Dates (soaked overnight)1/4 cup water

Date Paste Instructions:

Cover dates with water and soak overnight.In the morning drain and remove pits.In food processor or blender mix water and  soaked dates to form paste and set aside.

Cinnamon Roll Pastry Ingredients:

1 cup flax meal1 1/2 cup almond meal1 cup raw oats (ground into flour)2 tsp cinnamon2 tablespoon TRULY RAW Centrifuge Coconut Oil (melted)1/4 cup Raw Thai Coconut Sugar1 cup water

Cinnamon Roll Pastry Instructions:

In bowl, combine all dry ingredients.In separate bowl combine water, coconut sugar, oil, and date paste.Add wet ingredients to dry ingredients.Spread onto one nonstick dehydrator sheet and dehydrate at 150 degrees for 30 minutes.After 30 minutes, flip onto mesh sheet and reduce dehydrator heat to 115 degrees for the next 30 minutes.

While dehydrating…

Cinnamon Roll Filling Ingredients:

1 1/2 cup raw pine nuts (soaked overnight)1/2 cup raw cashews (soaked overnight)1/4 cup Dastony Coconut Butter (melted)1/4 cup Raw Thai Coconut Sugar1 Tbsp vanilla extract1/4 cup waterRaisins or other dried fruit or nuts if desired (optional) [dried cherries are fabulous!}

Cinnamon Roll Filling Instructions:

In food processor, combine everything but dried fruit or nuts and blend until creamy.Add fruit and stir.

Frosting Ingredients:

1/4 cup raw cashew butter (or homemade)1 Tbsp maple syrup (not raw but used in raw cooking) [ Substitute Thai Coconut Sugar or Raw Honey}1 tsp cinnamon2 Tbsp water

Frosting Instructions:

In food processor, blend until creamy, add more or less water to get desired consistency.

Assembly Instructions:

Place roll on parchment paper or non-stick dehydrator sheet.Spread filling onto roll.Roll tightly towards you.Slice and top with frostingTHE HEALTH BENEFITS OF THIS BREAKFAST

This dish is a blend of many nutritious ingredients, with no one ingredient carrying the dish.  It is gluten-free and raw vegan.  The protein from the nuts make this a perfect breakfast that will give energy throughout the day.  The sugars and flours are healthy and perfect if you are working to regulate blood sugar or are diabetic. The ground flax seed will provide healthy omega’s needed for mental clarity and stamina. (3)  This is one cinnamon roll breakfast that you can brag about!
