I love to cook, but this is one of my top 10 favorite recipes.  I have always enjoyed good BBQ and after several years without it, I decided it was time to work some BBQ magic.  We love to eat BBQ tacos with coleslaw or enjoy open faced BBQ sandwiches with gluten-free bread, coleslaw and oven-roasted curried potatoes.

Pulled Jackfruit Ingredients:

 

4 cans jackfruit in brine or water2 tbsp. olive oil1/2 large onion, chopped6 garlic cloves, minced3 cups veggie stock4 tbsp. apple cider vinegar2 teaspoons coconut aminos4 tbsp. thai coconut sugar2 tbsp. maple syrup1 tsp. dried thyme2 tsp. chili powder1 tsp. mustard powder4 tsp. smoked paprika1 tsp. apple wood smoked salt

BBQ Sauce Ingredients:

1 28 oz can crushed organic tomatoes (or make fresh)4 tbsp. thai coconut sugar2 tbsp. maple syrup2 tbsp. coconut aminos1 tbsp. apple cider vinegar1 tbsp. chili powder1 tbsp. smoked paprika1 tsp. apple wood smoked salt1 tsp. mustard powder1/2 tsp. dried thyme

Sweet and Spicy Pulled BBQ Instructions:

Chop wedges of jackfruit into smaller pieces.  In food processor, pulse onion and garlic.  Add onion and garlic to large skillet at medium heat and sauté in olive oil until translucent.  Add jackfruit and sauté until browns slightly.

Add the rest of the ingredients to jackfruit and stir until boiling.  Reduce to medium low heat and simmer for one hour.  Using potato masher, mash jackfruit as it’s simmering to cause the jackfruit to separate and have pulled texture.

Preheat oven to 400 degrees F.When all the liquid is evaporated place jackfruit on greased cookie sheet and cook for 20 minutes until slightly browned.While in the oven, place all BBQ Sauce Ingredients in blender and blend on high till smooth.Pour BBQ sauce on jackfruit and return to oven for 20 minutes.
